What a Complete Potato Chips Line Includes

A standard potato chips production line from SS Engineering Works includes these stages:

All food-contact surfaces are SS304 stainless steel. The slicer thickness can be adjusted from 1.2 mm to 2.5 mm depending on the chip style you want to produce. Thinner slices fry faster and come out crispier. Thicker ones hold flavour coating better.

Getting the Frying Stage Right

The fryer is where most chips lines either work well or cause problems. Ours uses a continuous immersion system with oil circulation and a filtration unit that removes starch and potato solids from the oil. This matters because dirty frying oil changes the taste and colour of chips, and most producers do not track oil quality closely enough. Temperature is controlled independently at different zones in the fryer. Potato chips need a specific temperature profile to come out golden without being over-fried at the edges. We have spent years getting this right.

Flavours and Variants

The same line can produce plain salted chips, masala chips, cream and onion, and other flavour variants. You change the seasoning drum settings and coating mix. No mechanical changes needed between flavour runs, just cleaning between batches. We can also add a tomato paste or liquid seasoning application system if you are producing variants that need wet coating rather than dry powder.

FULLY AUTOMATIC POTATO CHIPS LINE

The fully automatic potato chips production line takes raw potatoes in at one end and delivers seasoned, finished chips ready for packaging at the other — washing, peeling, slicing, blanching, frying, de-oiling and seasoning all in sequence. No manual transfer between stages.

Capacity is customised to what you actually need. Starting a new chips unit at 50 kg/hr is a different machine configuration than scaling an existing line to 500 kg/hr. We build both, and everything between. Most buyers come to us with a daily production target — we work backward from that to size the right line.

BATCH TYPE POTATO CHIPS LINE

The potato blanching machine is the stage that determines chip colour and texture — get it wrong here and no amount of good frying recovers it. Blanching removes excess surface starch, softens cell structure for even moisture release during frying, and locks the potato’s natural colour so finished chips come out golden rather than grey.

This unit handles that stage with an automatic temperature controller running from ambient up to 100°C. Temperature is set once and held — no manual monitoring needed during the blanching cycle.

  • Temperature range: ambient to 100°C, automatic controller
  • Construction: SS304 stainless steel throughout
  • Colour protection: controlled blanch time preserves natural potato colour, prevents greying in the fryer
  • Cell softening: improves moisture evaporation during frying — crispier finish, less oil absorption
